Corn & Black Bean Salsa

I am a big fan of dips, so naturally I love some chips and salsa but not all salsas are created equal.  I love this salsa the most because it tastes so fresh and has all my favorite ingredients. This is the perfect appetizer to munch on during the Super Bowl this weekend. 

Corn and Black Bean Salsa Recipe

| INGREDIENTS |

1 can yellow corn [drained]

1 can black beans [drained]

1 medium tomato [chopped]

1 medium red pepper [seeded and chopped]

1 medium red onion [chopped]

1 large avocado [diced]

1/4 cup cilantro [finely chopped]

1 tablespoon minced garlic

1/4 cup olive oil

1/4 cup red wine vinegar

1/4 cup freshly squeezed lime juice

salt to taste

In a bowl, mix together corn, black beans, tomato, red pepper, and avocado.  Add olive oil, vinegar, lime juice, and salt then stir together [you can add more of each based on your desired consistency].  Add cilantro on top and lightly mix.  Enjoy with fresh tortilla chips.
