Strawberry Salad Recipe for Summer

Salads are one of my favorite things to serve at a large gathering or dinner so I wanted to share this delicious strawberry one that is perfect for summertime. You can also add chicken or bacon to it if you want to make it more of a meal. We brought this to a BBQ with some family last week and it was the perfect side to have with summer fruit, corn on the cob, and barbecue chicken sandwiches. My kids love strawberries so much and could just eat a bowl of them so I tried to make a salad that they would eat too. I like to make my own dressings for salads when I can because they always taste so much better and are usually a lot healthier. This poppyseed dressing is light and doesn’t taste too heavy, but it’s got just enough kick in it with the garlic and vinegar. STRAWBERRY SALAD RECIPE

| INGREDIENTS |

  • Green leaf lettuce

  • 1/4 cup red onion, sliced thin

  • 2 1/2 cup Strawberry

  • 1 sliced avocado

  • 2 oz feta cheese

  • 1/2 cup toasted almonds

    [optional: you can also add grilled chicken breast to this salad]

| DRESSING |

  • 1/2 cup canola oil

  • 1 TBSP red wine vinegar

  • 2-4 cloves fresh garlic

  • 1 tsp dijon mustard

  • Fresh ground black pepper

  • 1 tsp Salt

  • 1 tsp sugar

  • 1/2 TBSP toasted poppy seeds

  • 1/2 tsp poppy seeds

Tear lettuce into a large serving bowl then layer with red onion, sliced strawberries, avocado, toasted almonds, and feta. Then pour the dressing over the top and toss together. Serve immediately.
