Since it's St. Patrick's Day tomorrow, I wanted to share a perfect green treat to make and share with your friends, or just eat them all yourself - I won't tell! I actually wouldn't blame you because these Chocolate Mint Brownies are incredible and it's really hard not to eat the whole pan. Hope everyone has a happy St. Patrick's Day!!
| BROWNIES |
1 cup butter
2 cups sugar
1/2 cup cocoa
1/2 teaspoon salt
2 teaspoon vanilla
1 1/3 cup flour
In a large mixing bowl, melt the butter then mix in the eggs and vanilla until well combined. In a separate bowl, mix sugar, cocoa, salt, and flour together and then add it to the butter mixer slowly until well combined. Pour into a 13x9 baking pan lined with tin foil or parchment paper. Bake at 350 degrees for 25-30 minutes. Put them in the fridge to cool for two hours before adding the mint layer.
| MINT FROSTING |
4 tablespoons butter
2 tablespoons evaporated milk
2 cups powdered sugar
1/2 teaspoon peppermint extract
a few drops of green food coloring
Blend all of the ingredients together with a hand mixer and then spread it on top of the cooled brownies. Then put them in the fridge for another two hours to cool before adding the glaze on top.
| CHOCOLATE GLAZE |
6 tablespoons butter
2 teaspoons vanilla extract
1 cup semi-sweet chocolate chips [or I like to use milk chocolate]
Add the chocolate and butter together in a bowl and microwave until melted, taking it out every 30 seconds to stir so it doesn't burn. Once completely melted, add the vanilla and stir together. Then pour over the top of the mint brownies and tilt the pan around to get the glaze spread evenly over the entire pan. Put them back in the fridge to cool. Once they are cool and the chocolate has hardened, cut them into small squares and enjoy every bite of these tasty treats.
