Wondering what to do with all those hard-boiled eggs you'll have at your house from Easter next week?? I have the perfect recipe for that today that is a little different than your traditional egg salad sandwich by turning it into a BLT and taking things to the next level. I love having hard-boiled eggs on hand in my fridge because they are great to top on salads or on toast for a quick breakfast so this recipe makes for an easy meal idea when you already have the eggs ready in your fridge. You can add more seasonings to the mixture based on your taste preferences, but I think it makes for a tasty sandwich you'll love. Let me know what you think!
makes 4 sandwiches
| INGREDIENTS |
8 hard boiled eggs
1/4 cup mayonnaise
3 Tbsp thinly sliced green onions
3 Tbsp sour cream
1 1/2 tsp Dijon mustard
1/8 tsp freshly ground black pepper
dash of salt
dash of lemon juice
8 slices of bread [see my wheat bread recipe here]
8 bacon slices, cooked
8 slices tomato
4 large lettuce leaves
| DIRECTIONS |
Combine mayo, sour cream, green onions, mustard, salt, pepper, and lemon juice in a medium bowl. Stir to combine well.
Coarsely chop eggs and add to mayo mixture. Mash with a fork until well combined. Toast the bread slices if desired, and then top with about 1/2 cup egg mixture, 2 bacon slices, 2 tomato slices, lettuce, and top half of bread. Enjoy!
