Slow Cooker Pot Roast Sliders

Happy New Years Eve!  Since there are lots of football games on TV this week, I thought this would be a great recipe for when you need to feed a lot of people and you don't want to be in the kitchen all day.  I love using my crock pot and actually wish I used it more because every time I do, I am amazed at how perfect the meat turns out and I didn't even have to do anything!  It's the best just sticking all your ingredients in there in the morning or the night before and then you have this delicious meal ready for you in no-time.  Once the meat is done, all you have to do is toast these buns with the cheese on one side to get melted and then you're ready to layer on the beef and sauce.  I added some sweet potato fries as a side because they go great with these sliders.  Hope you enjoy this easy, party ready recipe!

Pot Roast Sliders

| INGREDIENTS |

1 cup water

1 cup salsa

1 envelope onion soup mix

1 envelope Italian dressing mix

1 envelope au jus mix

1 [3-4 pound] beef roast

12 dinner rolls [or other slider rolls]

sliced swiss cheese [1 slice per slider]

creamy chipotle sauce

| DIRECTIONS |

Whisk together water; salsa, and seasoning packets.  Place roast in slow cooker.  Pour seasoning mixture over roast.  Cook on low 8 - 10 hours, or high 4 to 5 hours.  Shred beef.  Cut each roll in half and place on a broiler on low.  Broil 1 to 2 minutes or until edges of the rolls are golden and cheese has melted.  [Be sure to watch them closely so they don't burn!]  Remove baking sheet from oven.

Place a spoonful fo shredded beef on the bottom half of the toasted roll.  Spread Creamy Chipotle sauce on the top half.

Makes 12 sliders.

 

| CREAMY CHIPOTLE SAUCE |

1/4 cup sour cream

2 tablespoons chili sauce

2 teaspoons creamy horseradish sauce

Blend all ingredients in a small bowl.
